Caseificio Cavola 993 was founded in 1929 and is located in an enchanting little town in the mountains ofReggio Emilia, 900 m from sea level. Chemicals do not find a place in this company’s philosophy, which aims at reaching the highest standards of food safety and health value in their milk production.

To produce Parmigiano Reggiano from Mountains, the cheese farm selects only the best quality milk, milked exclusively in the mountain stables at the foot of the Tosco-Emiliano national park.

What makes Parmigiano Reggiano from Mountains so different from other Parmigiano Reggiano? In short, the place of production, i.e. the natural environment known for its enchanting landscapes, the exceptional quality of the ingredients and the careful production process.The cows of the mountain chain are bred in stables located near the production dairy and follow a 100% natural diet (provided by the disciplinary of the Parmigiano Reggiano consortium, without the use of chemical fertilizers and pesticides), which guarantees the well-being of the cows and an added value of the whole chain.

Storage Method:

Tightly wrap your wedge of Parmigiano in foil and store it in a dry section of your refrigerator’s vegetable crisper (around 4-8°C). It will keep its best flavor for about a month. If the cheese dries out during storage, wrap it in a moist paper towel and then in foil for a day before rewrapping just in foil. Freezing isn’t recommended.
